Took longer since I had 2 phone calls from a neighbor. Haven't stuffed tomatoes for a long while. Have never stuffed them with just veggies.

That does look pretty good...I would toss it all in a steamer for about ten minutes and top with rice vinegar and some pepper corns

Hope you all have had or are looking forward to a peaceful, enjoyable Sunday. That sure is a round tomato. I wonder what they do with the inside that's scooped out. Make puree? If I were to guess what's inside, it looks like black olives, peas, chunks of peaches, corn kernels and oatmeal. Now that has got to be way off, right?

Pixipixil, My first thought was oatmeal too. After zooming in, I think maybe it's cottage cheese. It does look great except for the peas, never could stand 'em. :-}

Whoops, I didn't read down far enough. The description says quinoa as does Aussiesapphire. I looked it up. It's neither grain nor cereal nor grass and is closely related to beets, spinach and tumbleweeds. Who'da thought!

Ginny, you have to try peas fresh from the garden. I make a great cold pasta salad with them. I love to go pick them and eat them as I'm standing there picking too!

Or snow peas, don't even have to peel them, just wash them and eat skin and all. Lovely in salads. Yummy.

Aussiesapphire, I do like snow peas or even baby peas. With the bigger ones it's actually more the texture I can't take more than the taste but I'm not overly fond of the taste either. And pixipixil, I love your analogy.

Most often, when a tomato is scooped out to use the shell, the "innards" are included in whatever is going back into the tomato.

Mmmmm - I just love being able to go and pick my salad for tea fresh from the garden. Pretty much live on salads in the summer!

I would use the tomato flesh/juices to make the dressing for the greens that are accompanying the stuffed tomato.
