We agree on this too! Pie is much more interesting than cake, but this carrot cake does look good!

Must be a day for satisfying a sweet tooth. Went grocery shopping and couldn't pass up a cherry pie in the store. We each had a piece and now it's in the freezer. Boy it was good. Time to start supper.
Hope you all had a good day.

Pixipixil --- Ditto for me, but my pie is peach -- they sell half a pie --- just right for just me! I'll have some tonight and maybe tomorrow and the rest in the freezer for another treat!

My mother was fond of anything peach. I'll be making a meal of peppers, peaches and ham--sweet and sour --over rice Sunday. I look forward to it.

If one is going to eat cake, carrot is one of the healthier versions of this dessert.

I didn't see a recipe that looked exactly like the one in the picture, but here's a quick carrot muffin recipe. You can always add some powder sugar for topping.

100g (1/2 cup) self-raising flour
100g (1/2 cup) soft brown sugar
1/2 tsp ground cinnamon
5 tbsp sunflower oil
100g (1/2 cup) dried fruit eg raisins, chopped apricots, glace
cherries (optional)
2 medium eggs
150g (3/4 cup) carrot, grated

Sift dry ingredients together, except fruit (if using); blend wet ingredients together; mix dry and wet ingredients until smooth, then fold in fruit, if using. Put into muffin tins or small cake pan. Bake 350 degrees F or 176 degrees C for 20-25 minutes or until a toothpick comes out clean.

Allow to cool; top with powdered sugar, if desired. Enjoy!
