I had cabbage, fried cornbread and coleslaw for supper

I never heard of that combination before. Not sure I'd care for both cooked and raw cabbage at the same time although I like both. I've never had fried cornbread either. But I do like just regular cornbread. How is the weather there in North Carolina today?

Oh super! It is March and time for the Wearin' O' the Green and corned beef and cabbage. Maybe even some green beer also! How about that? And don't forget the Irish Soda Bread!

Barbaranne, it's lazy man's cabbage rolls - take your favorite recipe for cabbage rolls and instead of making the rolls layer the ingredients in a casserole and bake. If you don't have a recipe you can find a good one here: theblackpeppercorn dot com - search for "Cabbage Roll Casserole".
This particular recipe is made with ground beef but where I come from traditionally the rolls are made with ground pork, I even use ground chicken/turkey for a waist-friendly version.
Feel free to adjust the spices to your taste

I forgot to mention that the above recipe can be made with sauerkraut as well.

Sounds good, I'll have to check it out, will do anything that is quick to fix. Love crockpot & oven recipes. I the pork is so lean today also one of my favorites, also the sauerkraut.
