Did this one as a mystery today. They sure look good. I like the place mats under them too, very pretty and cheerful looking.

Love these kind of muffins - so good for the sugar level too lol (I am a dreamer).

We have had two horrific thunder storms this afternoon, the noise and the heat were horrendous. Hate these summer storms and looks as though another one is on the way. We lost power for about an hour as well, so no comforting fans to help with the heat.

Aussie, so sorry your power is out. That's awful. Here in eastern Iowa we are expecting a snow storm of about 8 to twelve inches and blizzard winds starting tonight and into Wednesday. One good thing is I don't work today and Tuesday so I don't have to be anywhere. Hubby has a good snow blower so we'll just dig ourselves out as it happens. God bless and take care.

I would love to spend one winter where you get lots of snow and have to dig out, but not over the windows. that would make me smother. we get just enough snow to be messy.

We're going to have a springlike storm tomorrow in the middle of the Winter season. I'm in Ohio. It's been mild to warm for a few days and the storm is ahead of a cold front but it will only be cold for a few days and then get mild again.

Sorry I'm late getting back to you Aussie. I'm at the other end of the state. I'm in Cincinnati which is in Southwest Ohio just across the Ohio River from Kentucky.

Yum! These are good too, I found them in an old 1957 cookbook. I used pine nuts but any nuts work.

Coconut Bars
Base:
1/2 c butter
1/2 c brown sugar
1 cup sifted flour
Mix these together and spread about 1/4 inch thick on a greased cookie sheet. (Or press into the bottom of a rectangular cake pan). Bake at 325º F for ten minutes. Raise your oven temp to 375ºF, and cover base with topping as follows.

Topping:
2 eggs
1 cup brown sugar
1 teaspoon vanilla
2 Tablespoons flour
1/2 teaspoon baking powder
1/4 teaspoon salt (which I left out quite by accident and we never missed it)
1 1/2 cups coconut
1 cup chopped nuts of your choice

Beat eggs, add brown sugar and vanilla and beat until light and fluffy. Mix nuts and coconut together, sift in flour and baking powder and mix well. Stir into egg and sugar mixture and blend well. Pour over base and spread evenly. Bake at 375º for 15-20 min. Cool and cut into bars. Very rich!

Ooow that does sound so nice.I really love cooking, baking and everything making in kitchen and am so sad now not to be able to do anything at all.So frustrating and can't help looking at recipes which is daft as it's torture!!

Never liked cooking but lately have been trying some sweets. just what old folks need. made two banana puddings. tried to cut recipe in half but just couldn't get it to do good. will just go back to the whole thing and get fatter. hahahahaha

My husband won't let me bake because he can't stop eating if there are baked goods in the house. I love macaroons so your recipe sounds wonderful.

I bet you could cut the sugar in the topping by half and not notice a difference. We always do for cookies and cake.
