Sometimes I wish I would have kept my bread machine! Looks yummy!

I have one
use to use it a lot
but not anymore don't cook much now
think I will make some rolls today
I never baked in mine
always made roll dough my family loves them
i'm not crazy about them but love making them
I worked 20 yrs. in school cafeteria
I liked baking best of all

Right now cooking some meals to freeze. Chicken in the oven now. Will put some Stove Top dressing and cranberry sauce with it and a veggie.
I do a batch of meals at one time and freeze them. Then all I have to do is to microwave them. I'm not cooking just for me every night.

Love cranberries and love it in everything I have tried. Think I would like to try cranberries in some fudge too and this cranberry bread sure looks good!

I do like cranberries at Thanksgiving and Christmas. I prefer making the sauce from fresh or frozen cranberries, as opposed to the canned variety.

This bread looks absolutely delicious and shouldn't be too hard to make. Here's one version, a corn bread from allrecipes.com:

1/2 cup chopped cranberries
1 tablespoon white sugar
1 1/2 cups all-purpose flour
1 cup yellow cornmeal
1/2 cup white sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt (opt)
1 1/3 cups milk
2 eggs, beaten, or equivalent egg replacer
3 tablespoons butter, melted

I always mix my dry ingredients first. Then I mix the wet ingredients and slowly combine the two types of ingredients. When using nuts or whole berries, always fold them in last. Scoup/pour batter into a greased loaf pan and put into the oven at 350-degrees. Most breads like these take about 55 minutes to bake. Always check with a toothpick or knife. When the instrument comes out clean, the bread is done baking.

Cool before slicing. Enjoy!

Cranberry juice is good for the kidneys, by the way.

We make a fresh cranberry sauce by grinding (using an old meat grinder) a pound of washed cranberries, 2 - 3 apples, cored, and 2 whole oranges, peel and all. We save the juice and mix it with champagne, white wine or sparkling cider. Wonderful treat!

Aknan-sounds really good. I have used the oranges before, but never added the apple. I usually freeze it in small container when I do it & have it all year round. I do it in my food process & leave the juice with it to freeze.
All-My daughter put cranberries in her dressing yesterday and it was really great, will have to get her recipe. Hope everyone had a Great Thanksgiving!
