Thank you team for this one, never tasted corn bread, maybe one of your followers could send me the recipe, and I could give it a try, and let you know my verdict.found this one a wee bit harder then what I normal do, but loved the challenge. Have a good Sunday all.

You know, Santa, since y'all have so many American products over there you may be able to buy the mix over there. It's the Jiffy Cornbread Mix.

When you make up the mix, add 1/2 cup applesauce (I use unsweetened applesauce) to the mix and use either whole milk or half-and-half. I also add about a teaspoon of sugar; it doesn't make it real sweet, just adds a tiny bit of extra flavor. I bake it (don't remember the temp) in an 8" iron frying pan for about 20-25 min.

I don't know if y 'all use iron frying pans much in your neck of the woods but I wouldn't be able to cook without mine. I have an 8" and two 10" frying pans (skillets).

I have several different size iron pans and love using them
but sorry to say but they are getting harder for me to lift

Trynfindit Yes we do have frying pans and skillets, use my frying pans quite often, they have never been off the stove this week as we have had some workmen here and they are doing a great job so we have to look after these good workmen when they look after our property, bacon butties for their break, hence the frying pan.Have not come across it has yet but still looking.dbnc2 they have lots of lighter frying pans out at the moment and they are nice to have when you are doing lots of jobs with them.

Now THAT'S my idea of yummy. Warm cornbread baked in an iron frying pan and spread with butter when done. That's just how I make ours.

I use the jiffy mix, but sometimes add things, we like it and I only have to make 6 muffins which is just the right amount. I also like them with applebutter on them...

Oh CatLady, you got right to my heart (and my tummy) when you said you like apple butter on your cornbread. We discovered that when we ate at a restaurant in a small North Carolina town.

I use the jiffy mix too, but I add 1/2 a cup of applesauce to the mix, and use half-and-half or whole milk. My kids say I make the best cornbread ever.

Will have to try that, but I use skim milk found one that still tastes like milk, but really cut down on my cholestrol big time...also I'm a good applebutter eater. Have been borderline on cholestrol & sugar for a number of year and the last two years have been my best results.

Since we don't eat cornbread a great deal, maybe once a week if that, I use the whole milk. It's only about 1/3 to 1/2 cup (don't remember which the mix calls for) so I don't worry much about it. I do wish the makers of apple butter would make it in small jars, though; a little goes a long way.

Back in the day, my grand mother made us a pot of black eyed peas and skillet of corn bread. That was some good eating.
